It was a ball ache at the time, even my part time staff had to obtain food handling certificates and I had to renew mine too. Then of course the visit/s from the local food agency, glad we managed a five star kitchen.Fook that![]()

Could you post up that Lasagne recipe you gave me years back, going to do it on the weekend.
From memory and my tweaks.
Make your ragu sauce with mince beef as usual.
Get some good italian course sausage and remove from skins and fry.
Boiled eggs and then mash them up.
Get slices of spicy italian salami.
Lasagne sheets that don't need soaking but not the fresh ones.
Mild cheese
Parmesan.
Layer
Sauce
sausage
salami
egg
pasta
Repeat
Cheese on top parmesan on that and bake.

Had one this evening, with a green salad and some coleslaw. The last two were shop bought, the lasagne home made.
