Egg - spot on
Acar - needs whole green chilis
Rice - looks to have everything it should have. A bit wet.

Nice one, the bit wet comment helps. I was wondering about that as I've never had the dish other than my own.

Are you making the rice in a wok? I think if you're not you'll struggle to get the dry caramelised rice. It's a heat and available surface area thing.

That could be it, I used a frying pan and at higher heats the rice was popping everywhere so I lowered it a bit.

Its like making a sandwich and not using any bread - its healthier but a bit on the messy side. Whenever I go to a Mexican Restaurant they give you a few tortillas, the meat of choice on a sizzling hot plate with onions and peppers, some cheese, guacamole and refried beans. Then you stick what you want inside the tortilla and that's a Fajita. Best one I ever had was using goat.

Yeah, that's why I added the Mexican rice. That and without the rice there wouldn't be enough to stop me from being hungry 30 mins after eating it.
