Traditionally the ‘jelly ****’ is aspic ( the stock from boiling pigs trotters in water) which is poured in through the hole in the top of the pie after cooking and solidified in the fridge before eating/selling. Aspic jelly is rich in amino acids and full of collagen for healthy bone structure.
