Perch comes in and always does a good, solid 7/10 job, but the moment Tiote is fit he's dropped regardless of how well Perch has done in his absence and regardless of Tiote's awful form for the best part of 9 months. Same with Cabaye, when he's off form he should be dropped for Anita, they're similar players. Pardew won't drop the big names because he's too afraid to rock the boat, that in itself is the biggest crime of all.
Stamina is lung capacity and also depends on how quick blood travels through your muscles. If you want to become a cardio monster, here is a few tips:
Diet:
Pasta
Boiled/Poached Egg
Tomatoes
Fish
Blueberries
Turkey breast
New potatoes
Vegetables (steamed/boiled)
Excersize
Running... A lot of people give this up and alot of it's because they get depressed running around their own environment. Try running around public parks/canals etc.
Swimming
Cycling
Weight lifting
Also for weight loss and conditioning I recommend you seek "Afterburning exercises"
A couple more tips. Green Tea is good for taking junk out of your system and also speeds your metabolism and is also canny for your energy levels. Fat is not all bad and there is esential fats you can have such as olive oil, nuts, peanut oil, olives and numerous soya products.

I think it's more that YOUR French players aren't up for the fight jiggy, French players have excelled Europe wide for many, many years.
Again though, Cabaye, Debuchy & Yanga-Mbiwa are all league champions. Cabaye and Yanga-Mbwia were league winning captains so for me it's garbage. Players lose confidence in a manager and stop playing for them.
