On a side note, who is good with photoshop? How easy is it to change text within a photo? For example if someone wanted to change, say, the Northern Rock on our shirts to say something else but with the same font; or change the writing on a picture of a coke can to say something else but again, keep the same font etc.... how easy is that to do?

Not exactly the greatest photos given my eyes are half shut due to being inebriated and I badly needed a haircut, but it's the only recent one since I'd dropped the weight.

You can use PS tools like Clone Stamp or Healing Brush to clean up or entirely remove the parts from pictures that are infront or printed onto other parts of the image (like your examples - coke can/football shirt). As far as replacing text with new, it depends; either closely approximate the font with one you have yourself or if it's hand drawn type (like the coca cola logo) then you either need to be arsed to redo the whole thing or use bits of what exists to make other letters (eg a 'c' can become an 'e').
Good timing for me being on this thread hah. Yeah it's hilarious I actually posted it on that thread a page or so later as the Arnie love continued.
