At uni once I was dared to do a teaspoon of chilli extract, thankfully I wasn't quite that foolish and just did a pea sized blob (still that stupid!) It was between term times and all they had was tap water or vodka. Neither were effective at cooling it down, but whilst in serious discomfort no puking, spitting or drooling was required!
Bah!

Water actually makes it worse, just spreads the heat, milk is needed to dissipate it, and with the extreme chillis milk doesn't help as much as one might like!![]()

}When you see clips like this you can appreciate how far chillies are coming along. Not long ago the hottest you were likely to find in the UK would have been the scotch bonnet, a nice fruity but fiery chilli, chilli nuts like me could eat them and laugh at others who were feeling like they were going to die. but now with these extreme chillies we must be heading for a stage where even a well conditioned chilli eaters body is going to despirately try to reject them. Someone will end up dying with them unable to breath or doing some internal damage. But we all like to push our luck and boundries, so pass me the Ghost pepper!

Several of the really hot sauces recently are made using extract which I assume is a concentrate....the chilli growers are working on it all the time, hybridizing plants to grow even hotter chillis

As, more often than not, the football is depressing and the discussions are all witch hunts of who's to blame for each thing.Several of the really hot sauces recently are made using extract which I assume is a concentrate.
Many producers I've met are fiercely (?) proud of their Scoville ratings by natural methods, rather than the perceived 'cheating'of achieving heat by using extracts.
I love Lemon Drop chilli jam, which will seem a little lightweight to some of you fire-garglers
