A tradition to fry in nut oil since when? The best fish and chips have always, and still are, been fried in beef dripping.

Hull has always fried in nut oil until the 70s when lard started infiltrating from elsewhere.

Presumably it was either easier to supply, cheaper or just more popular than other methods, and I like to think Hull people and fish shops knows its stuff on fish and chips. Just because you aren't aware of our traditions doesn't make them never have happened. I think you'll find the fish and chips have gone downhill since the 70s too, which says a lot about lard.

Bob Carver still fries in nut oil and it hasn't done his family any harm over the last century, although I appreciate he isn't a shining example of decent fish and chips these days.

I know it's strange but I love bobs chips! Greasy, misshapen, loads of S&V and a bit of gravel. :emoticon-0148-yes:

It is all personal opinion but when I worked and lived in Hull for some time I thought it surprising how few, to me, decent fish and chip shops there were. Favourite was one on Cottingham Road opposite Waddingtons which was funny as he fried in oil and I am a beef dripping fan. He used to have a place in Sutton. Also one off Albert Ave where the fish were small but that cheap you could buy two. That was a beef dripping place.
Best fish and chips I ever has were at Knaggs in Bridlington when I was a kid, nod that was a long time ago, and at a place in Leeds in Roundhay. Both cooked in beef dripping.
 
The best chip shop Hull ever had,was on on Cottingham rerd. I don't know what it was called,but it was what is now,Man Wha House Chinese takeaway. This fine chippie,was ran by a Jewish family. They were the best iv'e ever had and they were fried in oil. I can't remember which oil,but they were the only chippy in Hull,using oil.

That was the one. His customers from Sutton and Bransholme used to go over to Cott Road. Just fish and chips and peas basically, not the dozens of things some do. Worked as well because there were always large queues.

Does he fry his chips in that nut oil too, that would explain why they are so rank, I did get a small fish and chips from there a few years ago and the fish was something you'd get out of the freezer section in Morrisons value range, shocking. Another decent chip shop that needs flagging up is that one on Whitefriargate, very nice
 
I'm only an occasional visitor to Hull so I've got no chance of trying all the chip shops mentioned on this thread however when I was last there I had some from Molly Malone's on Hessle Road, which I thought were quite good. Has anyone else been there who can tell me how it stacks up against the likes of Frydays, Cave St, etc?
I used To go to Mollys on a friday lunch when I worked down rerd.
Always packed and the fish was top notch, never tryed a pattie from there though.

I haven't had a pattie in over 30 years and this thread has whet my appetite. Of course, I'll never find them here but I'm a good cook so I could make my own. I realize the basic ingredients are mashed potatoe and sage and apparently, some include onion. Is it fresh or dried sage? Is onion really included?

If anyone can provide me with a pattie recipe, I'll be most appreciative. Also a traditional Hull batter recipe (if there is such a thing) will be welcome.

It's just potato and sage mashed together, dipped in batter and fried.
