Probably because Rice can't play LB. He can play CB though and in a number of midfield roles which heightens his appeal. Similar to Cucurella who can play CB or LB and has played in both roles for Chelsea.
No space for an attacking CM or proper wingers. Your formation plays 5 defenders not 4, just to accommodate Greaves for the sake of accommodating Greaves when we don't need another defender.

What makes you think Rice cant play left back? I bet he could play it a lot better than Greaves. Cucurella doesnt play centre back, he plays in a back three but definitely still as a left back

I think Greaves has played left at youth level and/or on loan. He's got both in his locker as he's proved this season and that's not a bad thing as far as his potential and value are concerned. Well yeah, cos we've been playing 2 up top with a back 4 and an extra attacking midfielder without conceding many anyway. Taking an AM or Winger off to accommodate the extra defender makes absolutely no sense, given the context.

We've been playing Connolly and Oscar or Tetteh and Oscar mainly as a pair recently anyway. It's just second half vs WBA and Cov we've reverted to a 1, but yes, playing 3 centre halves and 2 fullbacks is 5 defenders and you have to lose someone more forward minded to accommodate Greaves, just cos Greaves you wanna play Greaves at CB and no other rational reason.
