Ok ffs... cut slits into it and stuff with cuts of garlic cloves. Rub with olive oil and salt. Add a mix of oregano, rosemary, fennel and some mild chilli. Pan fry it first to sear. Then place in the oven for about 45 mins until you get some crackling. Serve with mint sauce.
