There is no right or wrong in cooking. If it works it works.I don't know if this is the right thing but I also season the outside like a steak other than mashing salt and pepper into the meat.

I took fans advise and threw in a bit of soy and worcester sauce, salt, pepper and some steak seasoning. and gave them plenty of time in the fridge...When ever I’ve made them myself I’ve never really liked them as much as decent quality ones from a shop.
