I would probably invest in businesses dragons den style. Pick ones I understood something about, and as well as investing cash, invest some time and knowledge.
As for tax, my accountant say HMRC are cracking down on "Tax Planning" which involves off shore trusts to avoid paying tax. Apparently they are getting quite aggressive with it too.
