Where are you getting the Andouille Sausage from or are you using a substitute?

As an ex-chef I like to tweak recipes so I'd probably use some reduced fat creme fraiche instead of the cream (on a bit of a diet at the mo!) and maybe add some chopped coriander (cilantro) to finish but I'd keep the rest pretty much as it is.
I was going to use a smoked sausage, with some chili in it if I can find one. I was thinking Creme Fraiche as well.
 
I'm also tempted to make this:

They are twice-cooked, though! I watch my daughter from the garden of the Plough in the rowing 'bumps' on the Cam - lovely spot.

I usually send Mrs G in to pay! :grin:

No, after deliberating for a nanosecond, I'll stay put - fearsome northerly winds or not.
I do remember the Feathers when Eddie used to run it, always a great pub back in the day.
I've been in there a couple of times. Think it's a little of the rowdy side, dingy side. I did like the fact they had Mild on tap. Not been able to go in to a pub and order "a pint of mild" like Ade Edmondson in "Bottom" before! That was about the highlight. I think The Cross Keys is the only Wymondham pub I've been to less.
