I was going to use a smoked sausage, with some chili in it if I can find one. I was thinking Creme Fraiche as well.That looks pretty fab and pretty damn Cajun too!
Where are you getting the Andouille Sausage from or are you using a substitute?
As an ex-chef I like to tweak recipes so I'd probably use some reduced fat creme fraiche instead of the cream (on a bit of a diet at the mo!) and maybe add some chopped coriander (cilantro) to finish but I'd keep the rest pretty much as it is.
One of the cheapest and best cuts for a slow cooker.Don't mind a bit of brisket but much prefer a bit of a skirt on slow cook. Lovely cut of meat.

I've been in there a couple of times. Think it's a little of the rowdy side, dingy side. I did like the fact they had Mild on tap. Not been able to go in to a pub and order "a pint of mild" like Ade Edmondson in "Bottom" before! That was about the highlight. I think The Cross Keys is the only Wymondham pub I've been to less.Hmmm, should I stick or twist?
No, after deliberating for a nanosecond, I'll stay put - fearsome northerly winds or not.
I do remember the Feathers when Eddie used to run it, always a great pub back in the day.
