Think ketchup can be northern if it’s kept in the cupboard or really northern if kept permanently on the table. Classy southerners will keep it in the fridge.

Ketchup is great with things like Hotdogs - gotta have Ketchup and Mustard ... but otherwise it's an insult to the chef ... One thing I've noticed - foreign brands (French / Danish / German) tend to be less sweet ... and therefore nicer IMHO...
The chef will not give a **** what condiment you choose. They’ll give a **** if you complain about something ******ed like a steak being overcooked when it isn’t or saying you have an allergy when you just don’t like something but then eat a dish with it in anyway because it looks good.
Not so - there are certain restaurants where Ketchup is, in fact, banned ... Goes to different levels in France - we were in Narjac (Aveyron) region and decided to order the Cote de Boeuf as a family treat when in a particular restaurant - me and the girls like medium-rare (girls verge towards rare) but the missus likes it a little more cooked - were discussing with the waiter who told us that chef would refuse to cook it anything other than medium-rare to rare ... Missus ended up with all the seared bits - which are her favourite anyway
