With regard to the beef stew, I remember hearing on a food show ages ago that what really enhances the flavour is adding a few anchovies. Weird but if the thought of it doesn't make you sick, give it a go.
With mashI'd say IBWT spag bol recipe with added chilli would make a fine enchilada, just bake in the oven with cheese on top and its done.
Had a curry last night with stuff found in the fridge / cupboards:
1 onion finely chopped
3 cloves garlic
some quorn pieces
Add the above to hot pan until cooked.
Then mix in:
2 chopped chillies
a heap of garam masala
a bit of dried ginger
a bit of cumin
a bit of turmeric
Add a can of chopped tomatoes and half the tin again of water and cook down.
I'd normally add a cube of vegetable stock here, but we had run out.
Stir in a load of spinach (and some green beans I had left over that were otherwise going to waste).
When almost done, stirred in a pot of natural yoghurt
Served with basmati rice.

Honestly quorn pieces in something like curry are great as they soak up the flavours. They also add much needed protein.I could go for that except the Quorn and the yogurt. Love a good veg curry.
I just really don't like Quorn. To up the protein I would put sweet potatoes, a small tin of chickpeas or a cup of green peas and serve with wild rice instead of white rice.
