I reckon that G is probably from the one of the gents toilets either under King Billy or Queen Victoria. The S looks like it's red lead paint, so could be a metal structure like a bridge - can't think of a red one though. Then again, might be from an old victorian post box - any in the old town? The Y looks so familiar, it's really irking me.
The Y is bugging me too, but the S was already mentioned I think. It’s the new health centre on Anlaby Rd where they’ve kept the wall from the Wesleyan Chapel

E K and Y to go. I've tried New Theatre and Black Boy for the E and K, but I'm not convinced by either of them. That Y is driving me crackers, as I'm sure I recognise it. It seems to be in a square, or on a tile?
Possible, but I'm not convinced. The one in the picture seems much flatter than the raised ones on Earl de Grey.
She’s actually posted to say that only the E and Y were outstanding and someone replied with the correct Y (which isn’t Earl de Grey)

The Y has gone from pigtails to cocktails, but I would never have found it if the answer hadn’t been given to be honest. edit - and is one block further along the same road as one of the other answers
And the K is from a very famous pub. Slightly disappointed I didn’t get it without looking to be honest. Edit - scratch that, I really don’t think that K is actually on the Black Boy, but that’s the only answer I can see she’s been given.
I'm going to have to admit defeat for now. I'm guessing that from your clue, it's a cocktail bar, that used to be either a hairdressers or a butchers. I've got Farnley or Fairley's in my mind, but nothing's coming up. I've tried looking on google maps near the other places, and it's beaten me so far.
