I’ve done a gammon joint . Boiled it in cider honey and mustard with a few other bits an bobs. Then glazed with soy honey and mustard and roasted for a bit.You must log in or register to see images

2 celery sticks
Black pepper corns
Thyme
Oil
Roast 45 mins
3 heaped dessert sound of floor after the initial roasting
Mix
Fry for 20 mins
Mash
Add about a litre of water
Once the water is agreed add a glass of port.
30 mins of mashing and cooking
