Got some chicken thighs in the oven pre seasoned from yesterday, everyone seasons different so I go like.
8 thighs - score the thighs to the bone, Salt the chicken.
Melt butter in a cup, a good bit least half a cup worth.
Add..
Mixed herbs
Chilli powder
Garlic
Fine pepper
Tiny bit of thyme + a drip of rosewater
Sugar, bout 2 tsps, if you like crispy skin.
Half a chicken stock cube

Stir melted butter til all is good and add to chicken in big bowl, get ya finger is and violate that **** til the butter starts to go solid on the chicken, oven on 180 for 30 mins and another 20 on 160.

Ain't putting pics up no more **** you guise.
You gotta go through the criticism my friend, stand tall. Hire a chef.

Some veggie burgers are lovely tbh, those fingers were very nice, more a batter with bread crumbs than just bread crumbs, it made em real nice.

Saying that remided me of the chippy round bear my old place, its very popular cos the owner uses some kind of cornflour mix to dust over the chips before frying, they come out like they've been lightly battered, making them real crispy. I know it has to be more than just cornflour but that's all the **** will say when you aks him why they're so crispy <laugh>

Southern Italian bolagnaise tonight. It will be with spaghetti because that's what I have in.

Explain to me what a SOUTHERN Italian bolognese is and why it is different to a Nothern Italian one or do you mean Ragu?

Ragu or bolagnaise, same thing. I found a recipe that was from the south and discovered that it is the dairy region of Italy so they use butter instead of oil and add whole milk to dishes.
At the moment mine is quite dry and just cooking in a small amount of wine and tom puree, I'll add milk at the end to create a sauce.

Who told you all this bolloxs and Ragu and bolonaise is not the same thing! One is more meat based than the other.

Ragu is more meaty and hs more minced ingredients. It also has white wine and beef broth added and a little cream at the end to enrich the flavours.
