Ah, my favorite time of year. In most years I follow the old European tradition of cooking a Christmas goose. I already have one in the freezer ready to go. Choice of alcohol? Yes Pork pie? I don't rightly know what that is (I bet I'd like it, though). I make the staple of the Missouri diet, pork steaks. Most non-midwestern Americans aren't familiar with pork steaks so I doubt you Englishmen are. We erect an artificial tree after Thanksgiving and, time permitting, put up a real tree about a week before Christmas. My wife is a professional harpist so this time of year is very intense for her. She has about 2-3 nights off between Thanksgiving and Christmas day without a concert, rehearsal, or gig. Ergo, time isn't always permitting.

My Dad liked to have Mid-Western goose for Christmas, but we didn't have a freezer, so it wasn't authentic.
