His relationship with FC is fairly irrelevant, it's only whether he was working on his own time, or the SMC's time, that is an issue. The SMC were perfectly happy for him to work for FC previously, just not on their time (he claims he was working on his own time in lieu, but the whole arrangement seems very slapdash).
Do you have a link where it says the smc were perfectly happy for him to work for fc? I've known quite a few lads who've been moonlighting and bosses usually turn a blind eye as they've known the kids in question were strapped for cash. It nearly always got messy and they'd be skipping work early or be on sick and working their other job. Summat happens and then they lose their job. As I said earlier it's tricky in this case proving it as it's at the same site.

Don't FC usually play on a Sunday which is usually a non working day and Friday nights which is also out of hours for normal work? If so, how was he working on SMC 'S time?
Probably less. The accounts have an average of 241 employees with wages (inc. Employer's NI) of just over £1m. That's an average of about £4k per employee. Edit: oops, you're on about FC rather than SMC.
I'm no employment expert, but from the sound of it, by the employer admitting wrongly dismissal, it looks as if these guys might get their jobs back and/or compo, but the law can be very strange.

Interesting. Stupid thing to do, there was obviously going to be a clash of interests. No. He put his work for the scum above getting our pitch ready for our game.
The SMC withdrew all their claims about the pitch not being good enough, they were completely made up, the independent report they had done actually said the pitch was well maintained.
Part of me, a very big part, hopes they were tossing it off & also up to plenty dodgy yet still manage to take them to the ****ing cleaners. #Karma
