Got to mention Roll Mopped Herrings, most supermarkets sell them in jars in a sweet brine with sliced gurkins, they are absolutely gorgeous.
I can remember my mum buying these in the day but they didn't taste anything like they are today.
Billy - Tuna steak marinated in terryaki sauce for half an hour then into the griddle pan but make sure its cooked right through and the pink has dissapeared in the middle otherwise it tastes a bit like fish jelly. Honestly when you can get it just right its lovely jubbly
My brother works in between Frankland and Durham, he's been there about 25 years now..

Some people just flash the steak about 10-15 seconds on both sides which leaves the middle bit still raw - yuckMedium rare on fresh Tuna for me like.

On the other hand I have found if you overcook it it tends to go rubbery thats why I try to get a tuna steak thats the same thickness all the way through. I learnt my lesson when there was only the end bit left at the supermarket and it was in the shape of a small mountain I had hells tares trying to cook itThat's called cooking it blue. I can eat beef steak that way but not fish![]()
