Ledley is writing "Hong Kong" (herng gong - "fragrant harbour" ) .
The "hello" to the right of the hand Ledley has the brush in, has definitely
been written by a calligrapher.
But Ledley has done a decent brush stroke at the bottom of the "gong"
character.

Ledders appears to be writing his name. According to Google Translate...
Ledley = 莱德利 (Lái dé lì)
Redley = 雷德利 (Léi dé lì)
The second character is clearly "de", so the first looks close to "lei"
No idea what Ginola is writing, though...
