I do actually make a lovely frittata.
8 eggs pinch of s&p ham on the bone, cheese, red onions and mushrooms.
My secret trick is to smell the bottom of the pan, until it's just on the turn, then whack it under the grill.
Important question. The bottom of the inside or outside of the pan?
The inside, just get your head in and savour the aroma. When it smells a little it's ready to go in.
