I didn't see the game so with there being 6/7mins added, I assume the game restarted around the 49mins mark? And ended on 51/52mins?

You're a bit off with your sums there: 49 + 7 = 56 which is when it ended.

The timer for the game was on 56 minutes when the game stopped.

The game stopped for VAR check at 43, play resumed at 49 and those 6 minutes (which became 7 to allow their corner) meant that at the whistle, the clock read 56.
