I think Americans have done more to push the idea of Paddy's Day as a piss-up day than anyone else. I'd prefer for our patron saint's day to be important to us for said saint's piety and devotion to Christ, and for that day to be about celebrating England's wonderful history and culture.
Also, Anglicanism is unlike other reformed denominations in that Saints still play a big part in faith.
Edward the Confessor was long-time patron saint, whilst St Cuthbert is patron saint of Northern England. They're both a big part of our history.
As for St George being 'generic', I understand why you say that but his value and honour as a martyr, and 'warrior saint' character, make him a brilliant one to have in my humble opinion. George has been a widely-known and respected saint since the Anglo-Saxon period.
