    Electronics is something worth considering. About 6/7 years ago we got a class of 8 year olds to build radio kits. Ones with no soldering required. They absolutely loved it. Took a couple of weeks and at the end of it they had something they could keep and use.

    This is something slightly different but also worth looking at imo...
