I am actually moving away from BBQ altogether. The best outside party food has to be pizza.
Buy a pizza stone.
Make or buy pizza bases (small ones for kids). Make a tomato and basel mix for the first layer and put it into a bowl. Prepare various toppings and put them into bowls.
Light the charcoal and when it is ready, push it to the sides of the bbq. Put your stone onto the grill and close the lid for 20 minutes. Get your guests to make up their own pizzas and place them on the stone. A thin based pizza cooks in around two minutes. If it is raining use the stone in the oven. The stone makes the difference. Even shop bought cheap pizzas taste better somehow. I bought my stone for £18 in John Lewis.
PS Kemptons burger meat will taste great as a topping!
I had a Dawson burger the other day, it was decent, but there was only meat on the left hand side.
I got some Lessta Burgers but they kept sliding down the table
