Even if they announce a deal like this one or McCormack, the payments might be spread over 4 years and it's only the payment each year that counts towards FFP. I know that's what Inter are doing with all their big signings whilst they're logging their sales as all incoming in one lump.

I think with the UEFA FFP the clubs are given software to report the relevant expenditure according to the rules.
