    I didn't have an omelette today, I had duck stir fry, but now that I am thinking, I should have put the stir fry in an omelette <doh>

    I suspect this might be disqualified as a proper omelette - but I often shallow fry some leftover potato in oil with paprika and add this as a base to the omelette , proceeding as normal to add the other omelette ingredients atop the potato.

    Worth a bash if youve never went down that road before, a bit Spanish Omelette-ish I suppose

    Because there have been so few posts on this excellent thread lately, I think it would be daft for your post to be disqualified, a couple of months ago, I would just have laughed and pointed at you for trying to put something like the above as an omelette! <ok>
