The obvious question to ask is whether we want Sarr to potentially be in a second relegation scrap in a row, because while Salernitana are currently in 14th on 17 points so are clearly a step up from Metz last season as they were abysmal, there's four points difference between Lecce & Empoli in 12th/13th and Spezia in 17th - although given 17 points is currently a decent buffer between Salernitana and 18th-placed Sampdoria on 9 (while Cremonese and Verona have even fewer)
We want to compete for the top 4, in the CL and the FA Cup so where is the sense in letting Sarr go out on loan when we will need to rotate?

Particularly as, from what I've seen, he could well be the best reserve option very quickly. He's certainly already ahead of Bissouma and Skippy.
