I watched it as well and I felt they were throwing people off the scent, they haven't stuck a knife in his head yet and it was too simple an ending.
I think they just when for the shock approach. Knife went through the left side of his chest so he's dead imo. May see him as a walker though. They actually said his head was untouched too.
