Tonight <drum roll> I shall attempt to recreate Pollo Pesto like what I had in Pizza Express. I couldn't get all of the ingredients (as listed on the description on the menu) from the Co-op, the ones I haven't got are in Comic Sans font, but who needs all those different cheeses:
Pasta (got Fusilli)
Chicken fillet sliced into small pieces
Mushrooms (I got chestnut ones)
Red Onions
Mozzarella Cheese
Gruyere Cheese
Parmesan Cheese
Pesto
Gran Moravia Cheese

I'm guessing the method is:
Fry the chicken, mushrooms and onion
Cook some pasta
Mix the lot together with half a jar of pesto, the mozzarella chopped up and a fair bit of parmesan
Sprinkle more parmesan on top
Brown under the grill

Yes. Lightly until they begin to go soft but still have the slightest of crunch. Lovely.
