That is one flavoursome plate of food. I think frying in the chorizo oil has a lot to do with it.
Looks nice and better than binning it. You can always spice up your oil with a small handful of cumin seeds, dry red chillies cardamom pods and a bay leaf or two if you have no chorizo .
Hopefully the frying killed off the mould.
