We've got a McMillan coffee morning thing going on at work today. Breakfast was my usual overnight oats, which I have topped up with a third of a rissole, a small pork pie and half a scotch egg. Dinner will be similar, plus various cakes. I'm sure I'll have another go with a brew later. ****ing hate working in our head office, I'll be half a stone heavier tomorrow.

Got a load of veg from a farm van that comes and parks up for a few hours down the road from me (found that out yesterday from a neighbour) 8 really big Sweet potatoes 4 Cobs 10 Onions 12 big thick carrots and a bunch of spring onion. £5.50! Deffo be seeing this guy again next week, apparently he drives into London 3 days a week to different locations each day. Says he does loads of business and it's well worth the trips. Forgot where he said the farm was though. Gonna do some roasted sweet potato strips later with the some cob and the chicken I prepped yesterday. Anyone do anything special with sweet potato? I usually just slice them up chips style and add a little sugar salt and pepper and roast them but I'm open for ideas?
Large baking tray. Slice potatoes and sweet potatoes and onions, layer them adding salt and pepper. Wrap some chicken thighs in bacon and place in top. Add stock up to the top of the potatoes and stick in the oven for 50 minutes. Finely chopped spring onion over the top at the end. That's off the top of my head.
Slice as in discs? I like it, sounds good tbh, I've got chicken I can put on top, about the stock though? Won't that end up making the potatoes and onion mushy? And blending all the flavours?
It'll cook them through and they will be soft other than the top layer which should go golden, add oil to the layers. The stock should evaporate to nothing. Lots of black pepper. Cumin also goes nice with sweet potato.
Ooo oh too late but that would've been bangdang, my old mum used to make swede turnip and sweet potato mash with scallions when I was a nipper. Next time deffo, I've got loads left ffs lol
Chicken was seasoned yesterday so didn't want to **** with that by using bacon Carrots, drizzled load of honey over them, bit of hot water, some garlic salt and pepper, and bit of paprika and chill flakes. Also sprinkled some sugar on them. The sweet potato I just used some sugar salt & pepper, basil and rosemary and olive oil. I like sweet potato and didn't want to **** with the taste too much. Will do some cobs later to go with it all.
So where are the pics of it all cooked? Plus...I’m hearing Honey, sugar n **** like that too much for a savoury dish, for my likeing
Yeh forgot to upload last night due to falling asleep after munching this bad boy. The honey was just on the carrots and I never used much sugar just a sprinkle tbh. I used the juices from the chicken and carrots (I cooked the chicken on top on a rack) to make some gravy, just added some water and flour.
