This should be a new thread -post a photo of your fridge. Looks well stocked that one BUT some questions: 1) why Utterly Butterly and Flora 2) why do you keep tinned potatoes in the fridge (and why use tinned potatoes at all, I thought they went out when they put an end to rationing in the UK) And I don't like any of the sponge puddings but would quickly devour that box of mini rolls. I will post one of mine and my servants fridge's later.
Whole cumin seeds Coriander powder 1/2 cinnamon stick White onion Garlic Chipotle chili Fresh green chili Black pepper Hot paprika Red wine vinegar Dark chocolate Chicken stock Passata Salt Red pepper Celery
Kept mine authentic although its similar to yours bar the chocolate and vinegar. Chilli con carne as you know is Tex Mex (not mex) So chocolate has no place for me. I also prefer the tamarind as opposed to the vinegar as tamarind is naturally sour without the sharpness. Not sure where the addition of chocolate came into the equation, possibly some poncey TV chef like Oliver.
Nice fridge. I wouldn't keep tins in there though mate... although I'm sure everyone did until fairly recently when someone said it can poison you or some ****. Sticky toffee pudding.
Mine is similar if not more basic as ginge’s bar the tamarind and basil. Though I use smoked paprika and lots of it. Also oregano not thyme. I also if possibly grind my own cumin. Also use black and white pepper. If we have them in the cupboard I grind dried smoked chillies.
Chopped onion. 3 crushed cloves of garlic. Fry till soft. Add mince and brown off. Half glass of (optional) red wine. Simmer. Tea spoon smoked paprika. Tea spoon ground cumin. Tea spoon ground coriander. Tea spoon cayenne pepper. Table spoon of tomato puree. Tin of chopped tomatoes, plus half tin of water Tin of kidney beans in chilli sauce, plus half tin of water. Bring to simmer. Season with ground salt and pepper One chopped red pepper. Four chopped red chillies. Cinnamon stick Fresh oregano. Simmer for an hour or so. As Ramsey would say, Done.
the tins don't stay there long enough, i only open them if i can't be bothered to make fresh, so i just open a tin of pots and fry them in butter.
Traditional beef casserole with leaks, new potatoes, carrots and peas.. touch of Worcester sauce and bingo. Served with home made Yorkshire puddings..
