Agree on the mini aubergine thingies, worst curry I had in Thailand was a green one made by the trecking guide in some forest near Chiang Mai. Watery and full of those, it wasn't good at all. I've had watery red ones out there though , way better. Proper hot as **** too. Generally though, much prefer a bit of body to the sauce. Couple of the Thai places near where I live do the runny ones and, while they're probably more authentic, they just aren't as good as a slightly thicker one. If I make one the sauce is thicker. Although not Indian thick.

Because they are cheap to buy and easy to clean and unbreakable which is a boon when you live and employ a bunch of clumsy fookers.
