Remove fat from a Loin pork chop place on a chopping board, cover with cling film and flatten chop out with a meat hammer or rolling pin to a thin escalope. Season with salt, pepper, and leave to rest for a sort while.(can also be done with a chicken breast or boneless thighs) Beat together 2 eggs, and parmesan cheese to taste, season and add pimenton (ordinary paprika will suffice) to liven up, add adash of milk to lighten mix. heat up frying add say 2oz of salted butter fry till nutty brown then add a glug of quality veg oil to prevent further browning. emerse escalopes into the egg & parmasan mixture fully coating the meat, then fry on a moderate heat in the nut brown butter, cook on both side for 2-3 minutes till golden brown on both sides. Remove from heat and leave to rest. serve with buttered charlottes when in season, or with sauted potatoes with fried onions, garden greens or mixed salad again seasonally. goes well with sauv blanc or a well chilled pinot grigio

Yeah, I know it is. I saw the bit when it was dipped in egg and just assumed it went into breadcrumbs next, thought it was an oversight. I'm ravaged by a stinking cold and throat, not happy at all. Going downhill.
the cheese gives the egg, the mix then sets like a softish batter around the meat, the paprika gives it kick, a German chef I knew in the 80's taught me it. he used to serve it with braised rice ... which was nice. The asians do something similar with lightly cooked cauliflower and served it with a chilli type sauce.
Paella for tea. Bloody lovely. For breakfast today I had the usual friday full English. For dinner Weightwatchers (!) sausage and mash with some beans and a cracking Spanish dish for tea. Mixed bag, must be said. Tonight I will be mostly sat on my arse watching golf cradling an ale.
Can't believe I've recently returned from a holiday in Ibiza and didn't once have paella ..and I love the stuff! Did have octopus a few times, and fresh squid too, washed down with estralla, very nice too - tunns 'anging with the locals.
Had another ruby today, 4th time in 2 weeks . Need to get the running shoes on tomorrow . Currently sipping a bottle of some Italian red from M&S and munching more stilton and wotsits! This is the life eh...
Oh and paella's are awesome, I never have them in England though, always save them as a special treat for holidays in Spain!
They're pretty straightforward to do at home to be honest, you don't really need an enormous pan either. Just some good stock, good seafood and make sure you have saffron. If only for the colour, I honestly don't have a clue if it adds any flavour. I'm half way through a tempranillo, nice too. This golf it getting good, still can't see us pulling it off though. Got a cheese in Sainsburys on Friday, Shropshire blue. Same as blacksticks only way cheaper. As good, easily.
Intriguing.. I shall investingate that cheese.. They stopped selling blacksticks in tesco haven't had any for a year or so..
It was on offer so cheap as. Got a good chunk for just over a quid! Blacksticks is still in Sainsburys, saw it the other day. Coming up to Christmas cheese soon. This golf is getting tense, the Talisker will have to come out soon.
