Sweet and spicy mint Pork belly chunks @luvgonzo this ones a banger bruv. They sit in fridge til 2moro.

Dice belly into chunks and beat with hammer. Add a lil salt and pepper 1st.

2tbs of sugar, 4tbs of mint jelly, garlic & mint (fresh if poss) and chillis

(use whatever chilli suits ya I used jar **** this time)

Will slow cook that covered for about 50mins on 160c then take off the cover and blast the **** out of it on about 200c til egdes are crispy.
