    I sometimes make a well in the middle of my pan when the rice is done, fry an egg, and then use the spatula to chop it up and mix it into the rice.

    Only cooked it a few times and it was slimy, is that because its overcooked? Big fan when I see it on a menu anywhere

    I tend to chop it up first and fry it off, put it to one side and then chuck it in near the end.

    Slurps might have an OG recipe for this though ?

    I have to threaten it first yeah, and then when it hops in I break the yolk and fry it.

    May sound cruel but I’m sure it’s what the egg would have wanted.

    like you say…needs frying off, I also chop it up instead of using whole or halved etc which doesn’t help getting rid of the slime.

    fried off then thrown into the pot pretty much as soon as the onions go in so it has more time to fry before the pot becomes saucy with further additions.

    I cut mine thicker as i find fewer cuts makes for less slime. Try this one;
