You can poach almost anything in coconut milk and put different amounts of chili in to spice it up depending on the meat used. With chicken its normally a staple dish after Ramadhan so kept fairly mild as mostly people are still recovering from fasting. Recipe below - if they don't have Galangal in Tesco just substitute ginger.
