As someone has already said, a proper bolognese does have chopped carrot in. An original at least. I'd post my recipe but I must have posted it more than once in the previous 2000 pages so cba. It includes a bay leaf by the way.
mirepoix if you are French, that's how you establish a flavor base. just onion and celery in my risotto base, keep the orange look out!
I sometimes add a bit of onion and mushroom to my dolmio if I can be arsed. You can get it with mushroom already in but that’s quite lazy.
