    You mean surf and turf?

    Which is lobster tail and fillet steak - on the same plate but not mixed.

    Burger with a prawn cocktail lobbed on top sounds like a monstrosity, with the addition of a pineapple ring, that should constitute a crime against cuisine.

    @The Ginger Marks

    Hiya mate. I need a good beef Madras recipe? Not happy with what I'm finding online, none of them contain any vinegar and I thought that was essential to the dish? Any chance you can hit me up with a recipe?

    They don’t all use vinegar especially the BIR restaurant style ones. Although I agree a Madras should reddish in colour (using Kashmiri chilli powder, paprika, turmeric) also have a fruity note with a tad of sourness from the tamarind mixed with vinegar or lemon juice.

    My recipe uses a base gravy with I know you don’t have but the good news is you can cheat. Boil 4 largish onions along with half a carrot in water until both are soft and simply blitz into a paste. In order for the onion mix to caramelise around the edges in a very hot aluminium pan or wok. Only adding more as it dries, try this guys one but add more Kashmiri chilli powder (mild) just bang in your vinegar tamarind in at the end.
