I do equal parts wholemeal and white flour. 400g (200g each) Then I make a buttermilk using 300ml of milk and squeeze half a lemon, whack it in the microwave for 1 min to speed up the curdling process 1 teaspoon bicarb soda 1 teaspoon salt Mix it all together. (save a splash of buttermilk to glaze the top) Turn it out onto a baking stone and shape, score two line on the top and then stick your knife in each corner to let the Fairies out (important) Glaze the top, chuck a few porridge oats on the top and bake at 200deg for around 25 mins. It's ready when you tap the bottom and it sounds hollow.

Yeah. Sometimes street food is whatever you can get hold of though. I ate fried locusts in Mauritania back along. They are fkin tasty as **** to be fair. Like a cross between prawns and chicken. Plentiful and helps to keep the pest problem under control
