Ok so welcome back. While you were away the beef stock and spice mix has infused into the mince beautifully and its time to add some more magic. Ill leave that to slow simmer for bout an hour and a half and add some puree and hot water if needed.

Sucky put up a pic of an Arctic roll for pudding...I’m not big on ice cream...maybe now n again. There’s a local ice cream place...they make the best ice cream ever...I’ll have a few tubs of their stuff in the summer.

You one of the onion snobs I mentioned earlier jak? I can't remember if yoh are or not No ones actually given a decent reason as to why onions 1st. I Reckon it's just some old wives thing you all saw ya mum do but have no reason why you do it. it's "just the way you do it" Ive never looked it up so Im happy to be proved wrong
If you soften the onion first they emit their lovely sweetness. You chuck em in the pot raw, that doesn't happen. They were too coarse for a bolognese sauce ordinarily but that's no biggie.
My servants do my onions for me so I cant be an onion snob! Only reason I could think to do them first would be to get rid of the really biting taste that you get if you eat a raw one
