Cheers bro. Yeah that's what I was on about, a fatty lamb mince. I noticed that in that recipe he added bacon to increase the fat content too Not that you'd ordinarily use pork in a dish that comes from Muslim countries.
Had prawn and chorizo orzo pasta yesterday for lunch, curtesy of the in laws. Recipe said half a red chilli, thinly sliced, which she put in. Turns out the plant they had been growing in their kitchen was a ghost pepper chilli for ****'s sake. Half one of those is ridiculously hot. They couldn't eat it, I just about managed to finish it. He'd bought it up the farm shop! It's now mine but I won't be using the ****er much, was on the bog at half five this morning.
You can get yourself trouble real quick with those Ghost peppers. Check out my mate Rock Jam Spice on Insta. Ben is half Jamacian and makes some bangin jerk dishes. He's just launched a new chilli sauce called 7 Bells. It's got Ghost, Carolina Reaper and 5 other of the hottest chillies going in it. It is actually very tasty, but hellishly hot. When he was testing it out, he gave me some to put on some jerk chicken and rice he'd made and knowing how hot it was, I just put a few drops in each corner rather than lashing it all over. I'd had a few beers and later on and got stuck into it and then must have had a forkful of the sauce. Just remember this ramp of heat going up and up and me not being able to see for the tears. I was in a proper state for about 30 mins after that, just remember leaving my tongue in a glass of cold milk and praying that the heat would subside.
My Mrs laughed at this. If you want her to send you a bottle when she gets back next week PM me. When I asked her to judge your Nasi Goreng she just commented “A little wet”. Can’t figure out whether she was very excited by it or thought your rice was a little moist. It looked great to me though.
Ah right, now @Schlem Boogerman was drier than mine but he wasn't fussed whereas I really liked mine.
I'll check it out. I've got a Szechhuan chilli oil that a mate made atm. I couldn't tell you what's in it, but it's ****ing beautiful this stuff
They look nice. Can't say I've ever had a chicken and mushroom pie. Probs because they sound bland. Where does the flavour come from?
I'm having another crack at this tonight. Gonna ramp up the flavours. Made more sauce and used a darker sugar. Gonna triple the fish sauce and add more chillis. Should be better.
