    I had an operation to remove cartilage from my knee when I was in my mid-20's. It was basically wear and tear from football but I've had knee problems since I was a teenager. A pretty sizeable bit had broken off and was floating around causing quite a lot of pain when it got trapped in the joints. At its worst I couldn't walk and as it was randomly getting stuck I found myself in a difficult situation on a couple of occasions having to just sit down and wait for the pain to subside. Getting the op on the NHS was going to take several months so I took advantage of my health insurance and had it done privately. The hospital was like a hotel and as I came round from the general anaesthetic I was brought the menu and the wine list. I decided on sandwiches and a coke!

    I'm quite the opposite, I under rate it when the truth is it's up there with the best.

    I ****ing love it, especially if the crackling is done properly.

    what cut do you buy when you do a pork joint then?

    I cant do crackling either. its always chewy.

    Shoulder usually for a dinner. It certainly isn't tasteless.

    For crackling it needs to be nicely scored with a stanley knife a few times. Put it in the sink, boil the kettle and pour boiling water over it, dry and repeat often until the skin is a tight as a gnats chuff.
    Rub liberal amounts of sea salt into it and roast high to start then reduce accordingly. If it's still not quite crispy enough at the end remove from the meat and up the oven for a quick 15 minute blast until perfect.

    I did shoulder the last time, was rubbish and bland.

    willing to try some proper expensive pork bought from a farm shop, maybe a rare breed pork.

    Having some friends round Sunday going to do a Mexican theme, pinyada for the kids and pulled pork burritos and tequilla for the adults. Even got some Mexican music a band called Calexico.
