    So I was about to post this and had a few things to do and then did "a @Sweats. " And burned the ****ing sorfrito.

    Love paella... when I’m abroad it’s one of those meals I look forward to for days, planning where we will go and what I’ll eat that day to make the very most of it.

    There’s actually a nice place locally that does takeaway paella, but I get the chicken and chorizo version, with big prawns, rather than the full seafood version that I prefer. It’s alright but not even close to the real deal.

    I’ve never been nervous when cooking .. I can’t get hold of the Spanish chef so am winging it.

    Going to be really upset if I **** this up.

    Yeah no stirring. I’m hoping the bottom is a bit crispy. The edges look a little crispy though I’ve cooked it in a ceramic pan . Should be cooked in a proper paella dish.
