I’m going to soak my chicken over night in buttermilk . Which you can make yourself. Just add lemon juice to milk. plan is soak it in that then follow his recipe.

Found another recipe which doesn’t . Issue is the saltpetre. It’s essential to the cure of the beef. Don’t think it’s going to be possible to make. May have to do a pulled beef instead with a horseradish cream. Kfc night first. Just need to go buy a **** load of oil. Also ran out of red stripe .
Quick heads up - oil is in short supply - ASDA substituted our Extra Virgin with garlic infused ... luckily we are not too concerned as we tend to use a garlic anyway
Can't wait to be able to go back to Lidl, the price difference is huge. The quality is also better imo.

You can get your potassium nitrate from a chemist or amazon for preserving your beef mate. Plenty of help on YouTube.
