    Make your own pizza. Generally much better than the supermarket or takeaway ones as you can use good quality cheese and toppings. Tho' I often end up putting too much on mine, leading to a massive wedge of toppings that slides around when I try to bite into it.

    Thai is pretty straightforward, very tasty too.

    Simple red or green curry, I can post a recipe here if you like.

    Multi Quote not working but to answer Swarbs, I've made my own pizza few times, made my own dough and fried it, pizza in a frying pan top nosh.

    Simple Thai Chicken Curry Red;

    Serves four.

    Three or four chicken breasts (depending on size) diced.
    1 Tablespoon Groundnut Oil
    2 tablespoon Red Thai Curry paste (decent shop bought is sufficient, no real point pissing about making it)
    1 medium white onion, finely sliced.
    2 cloves garlic, finely chopped
    4 Kaffir Lime leaves 9an decent asian supermarket will have these fresh, they can then be frozen and used whenever)
    1 tablespoon Thai fish sauce
    1 can of coconut milk
    300ml of chicken stock
    2 tablsepoons of light soy sauce
    zest and juice of one lime
    2 tea spoons of dark palm sugar (or dark cane sugar if you can't get)
    handfull of chopped coriander


    Heat oil and add sliced onion and garlic and cook till soft
    Add red curry paste and cook for two minutes
    Add coconut milk and chicken stock and bring to the simmer
    Add kaffir limes leaves and diced chicken and cook for fifteen minutes
    Add fish suace and soy sauce and simmer for five or ten minutes
    Add cane sugar and zest of lime, stir in, simmer for five minutes.
    Just before about to serve, add the juice of the lime and then serve the curry over boiled rice with a chopped coriander on top.

    Optional extras to add to the curry; chopped red pepper or handfull of chopped mushrooms or even both!!

    Eat with one large ice cold Singha as an accompaniment.

    I think this recipe suits green curry a little better, the lime element as green is lighter and more fragrant.

    Just subsitute green curry paste for the red and the rest is the same. I just use red because I prefer red curry, if that makes any sense??

    Red curry also goes well with beef, pork and duck whereas I think green curry best suits chicken and fish myself.


    The gist being, do either as both are good but I personally prefer red.

    I'm cooking this weekend. I'm planning on doing something out of my new Nigel slater book. Though I fancy having a bash at doing beef Wellington.

    If you're not concerned about the calorie content then try coconut cream instead of coconut milk.

    I used finely chopped onion with finely chopped mushrooms and dried oregano fried in butter, haven't heard of using pate? When I made it the flavour was lovely but the beef was supermarket stuff and there was a lot of blood that came out when I carved so It ruined the bottom pastry, I think you need a good piece of meat for it.

    If you do the same as me let the stuffing cool so that it sticks to the meat.

    This recipe is for coconut milk, doesn't need messing with at all.

    I take no responsibility if you deviate from the above!

    Half fat coconut milk is fine though, for the fat conscious amongst us.

    It is worse. If you don't mind loading up on calories then I find coconut cream to be tastier. Coconut milk is quite watery.

    For tea / dinner I purchased two rump steaks some Stilton and a French baguette.

    I had steak baguette with fried onions and mushrooms with Stilton and made some Balsamic roast potatoes. It was a joy to behold.

    Went to a boozer tonight, in a village just outside Hereford. On my own.

    Decided to sit in the bar, which was packed, on the only feree table and I did indeed get stared at quite a lot but they soon got used to me!

    Had two pints of Otter Ale, which was bloody lovely and perfectly kept, and lasagne with garlic bread, chips and salad. Was most enjoyable.

    Had a text convo with the Foo whilst was in there, he is well and on form.
