I can’t stand Riesling, I can’t get beyond the cheap German piss that was considered sophisticated in the British culinary void that was the 70/80’s. I’ve not tried a new World version in fairness, as I’d never buy one.
NZ Riesling can be quite nice.
The best ones are the Alsace Riesling versions, the French sort it out.

As for Reisling, tad too sweet to be taken seriously. Just not a fan of the sweeter white wines.
People need to try the new world and French versions, not sweet at all.

I’d eat it. Risotto isn’t as good good as chiefs. I haven’t made one in years. I used to do one on a Monday night with left over chicken from the roast and sweet corn. Was good.
